This refreshing concoction, enduringly popular at The Peninsula Shanghai’s rooftop bar Sir Elly’s Terrace, is actually quite easy to make at home.

 

Preparation:

  • Mix the cucumber juice, lime juice, tequila, and sugar (or stevia) together in a tumbler or lowball cocktail glass.
  • Top off the glass with the club soda, garnish with cucumber and lime wedges, and serve.

Ingredients:

 

  • 89 ml fresh cucumber juice
  • 15 ml lime juice
  • 15 ml tequila
  • sugar or stevia to taste (typically ¼ to ½ tsp per drink)
  • 89 ml club soda
  • lime and cucumber wedges
