This health-giving recipe helps to replenish collagen and keeps the body warm.
Michelin-starred Spring Moon’s culinary team lovingly creates this special dish using Japanese pig trotters, eggs and three types of vinegar (sweet, white and black glutinous rice vinegar) to create a perfectly balanced flavour with a rich umami taste and a hint of both sweetness and sourness.
