Signature Yule logs and Twelfth Night cakes let guests share the flavours of the season

 

In celebration of the winter holidays – and the season of giving – The Peninsula Paris is delighted to introduce a new collection of gourmet festive cakes. These delicious creations envisioned by the hotel’s award-winning Head Pastry Chef, Anne Coruble, make splendid gifts for friends and family, and ensure year-end celebrations are unforgettable.

 

Epicurean Yule Logs


This year, to spotlight the creative flavour combinations she employs at L'Oiseau Blanc – The Peninsula Paris’s Michelin-starred rooftop restaurant – Chef Coruble has reimagined three of the restaurant’s signature desserts in the form of festive yule logs.

 

The Yoghurt, Blackcurrant and Fennel Yule Log revisits one of the first desserts Chef Coruble presented at L'Oiseau Blanc in 2020. The log incorporates yogurt cream, fresh fennel, candied lemon, and a compote of blackcurrant and fir-bud vinegar paired with soft lemon biscuit.

 

A tribute to one of her most celebrated desserts, which was recently awarded Guide Lebey’s 2022 Prix de l’Excellence Gastronomique, the Vanilla Tobacco Yule Log comprises a grilled vanilla and tobacco mousse, layered with muscovado, a rapadura-tobacco biscuit, and creamy vanilla caviar enlivened by candied lemon and black cardamom crisp.

 

Echoing the flavours of one of her newest desserts, which will be available at L’Oiseau Blanc through December, the Truffle Hazelnut Yule Log marries roasted hazelnut praline (cazette) with foraged black truffle, hazelnut biscuit, and truffle-cazette cream atop a smoked black-truffle crunch.

 

Delectable Twelfth Night Cake

To end the Festive Season on a high note, Chef Coruble has created a magnificent crown of sweet Vienna bread – a delicious meeting between the traditional Twelfth Night cakes of northern France, and the king cakes enjoyed further south.

The crown is made from vanilla sourdough Vienna bread, filled with roasted-vanilla almond praline and vanilla-infused almond cream and glazed with salted caramel. As is customary, each crown has a special good-luck favour baked inside; and this year’s design is inspired by The Peninsula lions, which guard the entrances of all Peninsula hotels around the world and bestow good fortune upon those who enter.
