The Peninsula Paris debuts a daring and delicious new easter egg

Award-winning pastry chef Anne Coruble presents her original all-chocolate “Morel” to celebrate the arrival of Spring

 

At The Peninsula Paris, the City of Light’s legendary Palace hotel, it has long been a tradition to herald the first signs of Spring: the longer days, the warming temperatures, the timid appearance of multi-coloured flowers in gardens. But this year, one of the most anticipated emblems of the season – the appearance of wild morel mushrooms – will receive special fanfare from the property’s acclaimed pastry chef, Anne Coruble.

 

The Signature Chocolate “Morel” Egg

For her newest creation, Chef Coruble has drawn direct inspiration from both spring morels and the Easter holiday. Her superb dessert is distinctive for its egg-shaped chocolate shell, and its alveoli recalling the characteristic shape of the morel.

 

The signature Morel Egg, composed of a ganache of 65% dark chocolate and 60% Madagascan milk chocolate, has been crafted with raw Normandy butter and infused with fresh morels, whose aromas add surprising nuance to the roundness of the chocolate. The egg’s interior is filled with a praline that combines the crunchiness of hazelnuts, the yeasty notes of toasted sourdough brioche, and the earthiness of roasted grains. The flavour combination exemplifies the innovative vision of Chef Coruble, whose creations have been lauded for their unusual and ingenious flavour pairings – such as vanilla-tobacco, black truffle-chocolate, and hazelnut-mushroom.

The harmonious convergence of such flavours has continually delighted guests of The Peninsula Paris and won her culinary accolades, including a Lebey Award for Best Dessert at the 2022 Prix de l’Excellence Gastronomique.
