The Peninsula Hong Kong pays a new homage to the art of fine libations as the hotel launches an inspiration and pioneering new development in this ever-evolving realm of the hospitality industry.
Spearheaded by The Peninsula Hong Kong’s Head Mixologist François Cavelier, “Felix Lab” is a future-forward ‘cocktail laboratory’ at the hotel’s ever-popular Felix restaurant inspired by the notorious farm-to-table endeavor, aiming to break down barriers surrounding the naturality of mixology and to showcase the organic aspects of the drink.
Felix Lab comes complete with its in-house innovative equipment and processes used for the creation of bold ingredients by incorporating a wide range of botanicals and seasonal produce whilst supporting our local partners in the community. This innovative new concept embraces sustainability, creativity, and seasonality and takes mixology to a new level with a whole new cocktail range using a culinary approach to crafting beverages.
Francois and his team are actively experimenting each day to further evolve the cocktail and beverage menu.
