Each dish, meticulously crafted, showcases the vibrant culinary culture of Basque, from the flavorful Basque Country Dover Sole to the delicate Basque Cake. We invite you to partake in this gourmet experience and indulge in the essence of Basque cuisine.

Basque Country Dover Sole
The meat is tender and moist when cooked at low temperatures. Serve it over fresh, seasonal white and green asparagus. The special "Dieppoise" sauce combines mussels juice for a sumptuous seafood flavour, which is enhanced by the freshness of lemon, the luxurious taste of salmon roe, and the scents of chives and dill.

Real Basque Cheesecake
The Basque Cheesecake was first created in 1990 by Santiago Rivera near Chef William’s hometown of Bayonne. This light and creamy, yeast-free dessert is reimagined with Spanish Manchego and blue cheeses and served with lemon-scented cheese ice cream. A personal favourite recipe of our esteemed Chef that evokes the bountiful terroir of the French Basque Country.
